Roasted Peppers
Gardening this year was well…pretty sad around here! Too hot. Too dry. And too many ground squirrels. The shining stars were the peppers. At one point we had more than we knew what to do with so I decided to roast them all. I cut them up, seeded them, added a little olive oil then roasted them at 375 till they started to char just a little.
Once cooled I place them in a little mason jar, added some olive oil and stuck them in the fridge. Yummy with anything!
