Super Energy Kale Soup
I woke up this morning to a beautiful fall day. Perfect day for soccer. Perfect day for warm homemade soup. We have tons of kale ready to be picked in the garden so I decided to make a pot of Super Energy Kale Soup. We have lots of soccer games on the schedule today so I decided to make it first thing in the morning so we could grab a quick warm lunch between games. It was the perfect choice! Healthy, filling and delicious!
Super Energy Kale Soup
Yield: Serves 4
Prep Time: Total 40 minutes
Ingredients:
- 1 medium onion chopped
- 4 cloves garlic, chopped
- 1 TBS fresh ginger chopped
- 5 cups chicken or vegetable broth
- 1 medium carrot diced into 1/4 inch cubes (about 1 cup)
- 1 cup diced celery
- 2 red potatoes diced into 1/2 inch cubes
- 3 cups kale, rinsed, stems removed and chopped very fine
- 2 tsp dried thyme
- 1 tsp crushed sage
- 1 can white beans
- salt and pepper to taste
Directions:
- Chop ginger, garlic and onions.
- Heat 1 TBS of broth in a medium soup pot
- Saute onion in broth over medium heat for about 5 minutes stirring frequently
- Add garlic and ginger and continue to saute for another minute
- Add broth, carrots and celery. Bring to a boil
- Reduce to a simmer and cook 5 minutes more.
- Add potatoes and cook about 15 minutes more.
- Add Kale and rest of ingredients. Simmer 5 minutes more or longer for extra flavor.
I added the ginger and beans to the original recipe. If you add the beans and simmer for extra flavor you will need to add a bit more stock.
